- 400 gms Grated Louki / Bottlegourd (Gross weight)
- 1/2 Medium sized Coconut Grated
- 3/4 can Condensed Milk
- 10 gms Hazelnuts
- 10 gms Almond
- 10 gms Pistachio
- 10 gms Pecan nuts
- 10 gms Cashew
- 1 tbsp Gur/ Jaggery powder
- 1/8 Tsp Nutmeg powder
- 1/4 tsp Green cardamom powder
- 1 pinch salt
- 1 tbsp Roasted Poppy Seeds (Black or white)
- For Outer cover of Modak
- 500 gms Sweet Potato
- 300 gms Rice flour
- 1 tbsp soaked saffron water
- 1 pinch salt
- 1 tbsp Sesame Oil
- as needed For the mould sesame oil
- as required Baking sheet paper cuts to steam the Modaks (optional)
- as needed Edible Silver Leaf (optional)
Steps to make to make Sweet Potato Ukadiche Modak with B/Gourd, Coconut & nuts filling
- Boil the Sweetpotato and cool it. In the meanwhile prepare the filling. Peel and grate the Bottlegourd, discard the centre seedy part. Grate the coconut, finely chop or coarsely grind the nuts in a mixer grinder and prepare other ingredients. Heat a pan/ Kadai and add in the grated Bottlegourd and cook for about 5-10 minutes with a pinch of salt, then add the coconut and cook for another 10 minutes. Add in the condensed milk and cook for another 10 minutes, add in the gur/ jaggery powder too.
- Add the roasted poppy seeds, mixed nuts, nutmeg, and cardamom powder, and mix well till it forms a lump/ dough. Once done, put it on a plate and cool it.
- Once the Sweet Potato cools or is lukewarm peel and smash it and add in the rice flour, saffron soaked water along with saffron strands, salt and sesame oil and knead it into a dough. Cling wrap it and let it rest for half an hour.

- Take some Sesame oil, oil the mold, and take some sweet potato and rice flour dough and make the wrapper/ cover first, inside the mold. Leave the center hollow. Stuff in the Bottlegourd mix filling and take a small dough and seal it, gently take it out of the mold and keep it along with a baking paper in the steamer. In this way finish off for all. Once steamer fills up, steam it for 7-10 minutes.
